Spaghetti «frittata»
Ingredients
Serves 4
28cm round cake or flan tray or baking dish 20x30 cm
| 200g | Cooked Barilla Spaghetti |
| 6 | Eggs |
| 125ml | Milk |
| 150g | Cubed ham or roasted bacon bits |
| 150g | Scamorza, provolone or other medium aged flavourful cheese |
| Grated pecorino | |
| To taste | Salt and pepper |
For the side sauce
| 400g | Peeled tomatoes |
| 1 | Small white onion |
| 1 | Clove of garlic |
| To taste | Salt |
| EVOO as necessary | |
| 1/2 bunch | Basil leaves |

Method
Step 1
Dice ham & cheese into 1 cm cubes.
Step 2
In a large bowl, beat eggs with 2 tbsp pecorino, season.
Step 3
Add cold cooked spaghetti & mix well.
Step 4
Fold in ham & cheese.
Step 5
Transfer to a baking dish, press down evenly.
Step 6
Sprinkle extra pecorino on top.
Step 7
Bake at 180°C for ~25 min (ventilated oven).
Step 8
Cool slightly, cut into slices.
Step 9
Top with tomato sauce & fresh basil leaves.
Tip
Make it your own—add sautéed mushrooms, peas, or caramelized onions for extra flavor!
