Ingredients

Serves 4

320g Barilla Rigatoni
600g Red cherry tomatoes
2 Cloves of garlic
2 Twigs of basil
EVOO
To taste Salt
350g Yellow cherry tomatoes
1 Cucumber
1 Red pepper
1 Small red onion
150g Feta
3 Sprigs of fresh oregano
1 Lemon

Method

Step 1

Halve red cherry tomatoes, season with EVOO, salt, crushed garlic & basil (leaves + stalks).

Step 2

Roast at 120–140°C for 30 min.

Step 3

Blend with a splash of EVOO until silky.

Step 4

Slice onion into thin wedges (soak in cold water for a milder taste).

Step 5

Halve yellow cherry tomatoes.

Step 6

Dice cucumber & pepper (1 cm).

Step 7

Add grated lemon zest, a few oregano leaves, season & toss.

Step 8

Cook pasta al dente, drain and let rest.

Step 9

Toss with veggies and half of the tomato sauce.

Step 10

Top with the remaining sauce, seasoned vegetables, crumbled feta & fresh oregano.
