Creamy Pasta Salad
Ingredients
Serves 4
| 320g | Barilla Rigatoni |
| 600g | Red cherry tomatoes |
| 2 | Cloves of garlic |
| 2 | Twigs of basil |
| EVOO | |
| To taste | Salt |
| 350g | Yellow cherry tomatoes |
| 1 | Cucumber |
| 1 | Red pepper |
| 1 | Small red onion |
| 150g | Feta |
| 3 | Sprigs of fresh oregano |
| 1 | Lemon |

Method
Step 1
Halve red cherry tomatoes, season with EVOO, salt, crushed garlic & basil (leaves + stalks).
Step 2
Roast at 120–140°C for 30 min.
Step 3
Blend with a splash of EVOO until silky.
Step 4
Slice onion into thin wedges (soak in cold water for a milder taste).
Step 5
Halve yellow cherry tomatoes.
Step 6
Dice cucumber & pepper (1 cm).
Step 7
Add grated lemon zest, a few oregano leaves, season & toss.
Step 8
Cook pasta al dente, drain and let rest.
Step 9
Toss with veggies and half of the tomato sauce.
Step 10
Top with the remaining sauce, seasoned vegetables, crumbled feta & fresh oregano.
