A celebration of Mediterranean flavours, this recipe combines sweet cherry tomatoes, zucchinis, and aromatic basil. Finished with delicate flavour of salted ricotta, it’s a simple yet vibrant plate of pasta that tastes like summer.

Serves 4
| 320 g. | Barilla Protein + Fusilli |
| 20 g. | Leek |
| 300 g. | Zucchinis |
| 100 g. | Cherry Tomatoes |
| 10 leaves | Basil |
| 20 g. | Extra Virgin Olive Oil |
| 30 g. | Salted Ricotta |
| to taste | Salt and Pepper |

Method
Step 1
Slice the leeks into thin strips, julienne style and add to a heated pan with some oil.
Step 2
While the leeks are cooking down, wash and dice the zucchinis, then add to pan with the leeks. Continue cooking over medium heat and adjust the flavour. The zucchinis should still have a bit of crunch, at this point remove from the heat.
Step 3
In the same pan, add the remaining oil and quickly sauté the cherry tomatoes cut into quarters.
Step 4
Cook the Fusilli in plenty of salted water, according to time indicated on pack, then drain al dente. Toss together with the previously prepared sauce over heat.
Step 5
Finish with torn fresh basil leaves, and salted ricotta then serve.
